Chicken and Corn Chowder

Chicken and Corn Chowder

Ingredients:
2 cups cannellini beans (soaked for 24 hours prior)
4 ears non-GMO corn, kernals removed
2 small golden potatoes, peeled and diced small
1 small onion, finely chopped
1 stalk celery, finely chopped
Olive Oil
4 cups chicken broth
sea salt
1/4 tsp. cayenne pepper
coconut oil
1 lb chicken, diced
fresh chives for topping

Directions:
In crock pot, soak cannellini beans for 24 hours. Rinse. Put back in crock pot. Add corn, potatoes, onion, celery, olive oil, broth and cayenne. Cook on low for 8 hours. In a pan, heat coconut oil. Add chicken, and cook until browned. Add meat to soup and cook 15 more minutes. Serve with fresh chives on top.
